Enjoy savory Camping Breakfast Burritos with sausage, eggs, green chiles, and cheddar cheese cooked over a campfire. Prepare ahead, wrap in foil, heat over coals for a quick, delicious meal in just 30 minutes.
Ingredients:
  • 1 lb bulk breakfast pork sausage
  • 12 eggs
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 2 cups shredded cheddar cheese (8 oz)
  • Salt and pepper to taste
  • 8 (12-inch) flour tortillas
Instructions:
  • Cook the sausage in a 12-inch skillet, stirring often, until it is no longer pink.
  • In a large bowl, vigorously whisk eggs until thoroughly combined.
  • Once the sausage is fully cooked, gently pour in the eggs. Stir frequently as the eggs begin to set. Once slightly runny, mix in the green chiles. Cook until the eggs are fully set. Sprinkle cheese and mix well. Remove from heat and enjoy!
  • Wrap tortillas in a clean kitchen towel and microwave on High for 30 to 45 seconds to soften them. Lay 1 tortilla on a large sheet of foil. Spoon one-eighth of the egg mixture onto the center of the tortilla. Fold in the ends and roll into a burrito shape. Wrap the burrito tightly in foil. Repeat the process with the remaining tortillas and egg mixture.
  • Wrap the burritos in foil and keep them in a large resealable plastic bag in the fridge or a cooler with ice until ready to be cooked.
  • Cook the wrapped burritos in hot coals next to the fire until thoroughly heated, for 10 to 15 minutes, depending on the fire's intensity.
