Mexican Chicken Tenders

Quick and simple Mexican chicken tenders for busy weeknights.
Ingredients:
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 egg
  • 1 cup Progresso™ plain panko crispy bread crumbs
  • 1 package (14 oz) uncooked chicken tenders (not breaded)
  • 1/2 cup thick & chunky salsa
Instructions:
  • Preheat oven to 400°F and generously coat a large cookie sheet with cooking spray.
  • First, add the taco seasoning mix to a large resealable plastic bag. Then, beat the egg in a shallow bowl. Next, add the bread crumbs to another large resealable plastic bag. Coat the chicken by placing it in the taco seasoning mix bag, seal it, and shake well. Dip the seasoned chicken in the beaten egg. Finally, coat the chicken by placing it in the bread crumb bag, seal it, and shake well before placing the coated chicken on a cookie sheet.
  • Bake the chicken for 15 to 20 minutes, turning halfway through, until cooked through and the bread crumbs are golden brown. Enjoy with salsa on the side.
