Spicy chicken tenders with creamy avocado dip - a perfect party appetizer!
Ingredients:
  • 600g chicken tenderloins
  • 2 tsp Mexican chilli powder
  • Vegetable oil, to shallow fry
  • 2 ripe avocados
  • 21.00 gm fresh lemon juice
  • 20.00 ml fresh coriander, chopped
Instructions:
  • Diagonally slice each tenderloin into 3 strips. Combine flour and chili powder on a plate and chill.
  • Coat chicken in flour mixture, gently shaking off any extra.
  • Heat a generous amount of oil in a spacious frying pan. Cook the chicken in batches, making sure not to overcrowd the pan, until golden and crisp, about 5 minutes per batch. Transfer to paper towels to drain.
  • Combine the creamy avocado with zesty lemon juice and fresh coriander in a bowl. Season to your liking.
