Spicy Chicken with Broccoli

Spicy chicken tenders made easy with pre-cut chicken breast strips!
Ingredients:
  • 1 package (15 ounces) chicken breast tenders (not breaded)
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 pound broccoli
  • 3 tablespoons chili or vegetable oil
  • 1 hot fresh green chili, cut into very thin slices
  • 2 tablespoons brown bean sauce
  • 2 teaspoons finely chopped garlic
  • 1 teaspoon sugar
  • 1 teaspoon finely chopped gingerroot
  • 3 green onions, cut diagonally into 1-inch pieces
Instructions:
  • Combine the chicken, cornstarch, salt, and white pepper in a medium bowl. Chill in the refrigerator for 20 minutes, covered.
  • Peel and cut broccoli into 1-inch stems, removing flowerets. Slice stems diagonally into 1/4-inch pieces. Boil broccoli in water, cover, and cook for 1 minute. Drain and rinse with cold water.
  • Preheat a wok or 12-inch skillet over high heat. Add oil and swirl to coat the sides. Quickly stir in chili, brown bean sauce, garlic, sugar, and gingerroot for 10 seconds. Toss in the chicken and stir-fry for about 2 minutes until no longer pink. Add broccoli and onions and stir-fry for about 1 minute until broccoli is heated through.
