Orecchiette pasta with grilled chicken, portobello mushrooms, broccolini, and red sauce for a delicious Italian dinner.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 cup uncooked orecchiette pasta
  • 1 cup tomato pasta sauce
  • 0.5 cup broccolini, cut into 1 inch pieces
  • 0.5 (14.5 ounce) can stewed tomatoes, drained
  • 0.33333334326744 cup sliced portobello mushrooms
  • 2 tablespoons minced garlic
  • 2 teaspoons crushed red pepper flakes
Instructions:
  • Preheat the grill to medium heat and brush the grate with a light coating of oil.
  • Grill chicken breast halves until they develop dark grill marks and cook through, around 5 minutes per side. Allow the chicken to cool slightly, then shred coarsely using 2 forks in a bowl.
  • Boil a large pot of salted water. Cook the orecchiette pasta until al dente, about 5 to 8 minutes. Drain and return pasta to the pot.
  • Toss chicken breast meat, pasta sauce, broccolini, stewed tomatoes, portobello mushrooms, garlic, and red pepper flakes with cooked pasta. Cook over medium heat, stirring occasionally, until mushrooms and broccolini are tender, about 5 to 10 minutes.
