Mexican fiesta slaw

Delicious Mexican slaw, perfect for a spring day.
Ingredients:
  • 1/2 red cabbage, thinly sliced
  • 1/2 savoy cabbage, thinly sliced
  • 1 small bulb fennel, thinly sliced
  • 1 apple, cut into matchsticks
  • 250.00 ml coriander leaves
  • 125.00 ml mint leaves, roughly torn
  • 1/2 red onion, finely diced
  • 1 long red chilli, seeds removed, finely diced
  • 125.00 ml pepitas (pumpkin seeds)
  • Juice of 2 limes
  • 36.40 gm olive oil
  • 40.00 ml plain natural yoghurt
  • 5.90 gm dijon mustard
  • 1 tsp cumin seeds, crushed
  • 7.20 gm honey
  • 2.40 gm salt
  • Juice of 1 lemon
Instructions:
  • Place fennel and apple in a bowl of refreshing cold water along with lemon juice. Mix cabbages, coriander, mint, red onion, chili, and pepitas in a large serving bowl.
  • Whisk dressing ingredients in a mixing bowl until thick and well combined.
  • Once prepared, remove apple and fennel from water, gently dry, and mix into the slaw. Coat the slaw evenly with the dressing. Enjoy as a delightful addition to a communal picnic.
