Add peppers, cumin, salsa to a tasty Mexican breakfast frittata – ideal for solo meals.
Ingredients:
  • 1 teaspoon olive oil
  • 1 red bell pepper, cut into thin strips
  • 1 medium white onion, thinly sliced
  • 0.25 cup milk
  • 4 egg whites
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 pinch ground cumin
  • 0.5 cup salsa
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a small casserole dish with cooking spray.
  • In a large nonstick skillet, warm oil over medium heat. Sauté bell pepper and onion until tender, around 5 minutes.
  • Combine milk, egg whites, whole eggs, salt, pepper, and cumin in a medium bowl using a whisk while the pepper and onion are cooking.
  • Pour the cooked vegetables into the casserole dish and generously top with the egg mixture.
  • Cook in the hot oven until eggs are firm, approximately 30 minutes.
  • Take the frittata out of the oven and cut it into wedges or squares, then plate it and generously spoon salsa on top.
