Mexican Cheese and Bell Pepper Spaghetti Bake: Layers of cheese, spaghetti, and a zesty green sauce made with bell peppers, broth, and sour cream.
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 4 large green bell peppers, stemmed and seeded
  • 1 cup water, or more as needed
  • 2 cubes chicken bouillon
  • 1 clove garlic, peeled
  • 1 tablespoon butter, or more to taste
  • 1 (16 ounce) container sour cream
  • 1 cup shredded mozzarella cheese, or more to taste
Instructions:
  • Bring a large pot of salted water to a boil. Cook spaghetti until al dente, about 12 minutes. Drain and set aside.
  • In a medium pot, bring bell peppers, water, chicken bouillon, and garlic to a boil. Simmer until peppers are soft, about 7 to 10 minutes. Remove from heat and cool slightly before continuing.
  • Preheat the oven to 350°F (175°C) while spreading a layer of butter on the bottom of a 9x13-inch baking dish.
  • In a blender, add half of the pepper-broth mixture. Secure the lid and use a potholder to hold it down; pulse briefly before blending until smooth. Transfer the blended mixture to a bowl. Repeat with the remaining mixture. Finally, stir in the sour cream.
  • Start by arranging a layer of spaghetti at the bottom of the baking dish. Add a generous amount of the pepper puree on top and sprinkle with a layer of mouthwatering mozzarella cheese. Continue the delicious layering process of spaghetti, pepper puree, and cheese until all the ingredients are used.
  • Bake until the cheese is gooey and bubbly, approximately 20 minutes in the preheated oven.
