Savory beef and pork stew cooked with green chiles and tomatoes for a flavorful meal.
Ingredients:
  • 1.5 pounds beef chuck, cut into 1-inch cubes
  • 1.5 pounds pork shoulder, cut into 1-inch chunks
  • 1 green bell pepper, seeded and chopped
  • 1 clove garlic, minced
  • 2 (14.4 ounce) cans whole peeled tomatoes
  • 1 (7 ounce) can chopped green chilies
  • 0.33333334326744 cup chopped fresh parsley
  • 0.5 teaspoon white sugar
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground cumin
  • 1 cup dry red wine
  • salt to taste
Instructions:
  • In a large skillet over medium heat, gently brown the beef and pork in olive oil. Once evenly browned, transfer the meat to a bowl using a slotted spoon and set aside. Sauté the bell pepper and garlic in the same skillet until tender. Remove from heat.
  • In a large pot, mix together tomatoes, green chilies, parsley, sugar, clove, cumin, and red wine. Crush the tomatoes with a spoon. Bring to a boil, then simmer. Add browned beef and pork with their juices, cooked green pepper, and garlic. Cover and cook on low for 2 hours, stirring occasionally. Uncover and simmer until sauce thickens, about 45 minutes.
