Savory Mexican-inspired ground beef and potato skillet dish for a flavorful meal.
Ingredients:
  • 2 tablespoons vegetable oil
  • 5 cups diced potatoes
  • 1 pound ground beef
  • 2 medium carrots, shredded
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, diced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground black pepper
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can diced tomatoes, drained
  • 0.75 cup prepared salsa
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • In a large skillet over high heat, sizzle potatoes in hot oil until golden and crispy, stirring occasionally to avoid sticking, for 8 to 10 minutes. Transfer the golden-brown potatoes to a warm spot.
  • Combine beef, carrots, onion, bell pepper, jalapeno, cumin, chili powder, garlic powder, salt, oregano, paprika, and black pepper in a skillet. Brown the beef for 7 to 8 minutes until crumbly. Add corn, tomatoes, and salsa, then stir and cook for an additional 3 to 4 minutes. Mix in cooked potatoes. Sprinkle with Cheddar cheese, cover, and melt the cheese over medium heat for about 1 minute. Serve and enjoy!
