Spicy Mexican-inspired muffins: the ultimate afternoon treat. ¡Delicioso!
Ingredients:
  • 300g (2 cups) self-raising flour
  • 5.00 gm taco seasoning
  • 2 eggs
  • 185ml (3/4 cup) milk
  • 125ml (1/2 cup) extra virgin olive oil
  • 420g can Chilli Beanz Medium
  • 120g (1/2 cups) coarsely grated cheddar
  • 125g can corn kernels, drained
  • 2 green shallots, thinly sliced, plus extra, to serve
Instructions:
  • Preheat your oven to 200C (180C fan forced) and prepare a 12-hole muffin pan with paper liners.
  • In a large bowl, mix flour and taco seasoning. Season to taste. In a separate container, whisk together egg, milk, and oil until smooth. Set aside 60ml (1/4 cup) of Heinz Chilli Beanz and 2 tbsp cheese. Add the rest of the beans, cheese, corn, shallot, and milk mixture to the flour blend. Gently stir until just combined. Spoon the mixture into muffin holes and top with the reserved beans and cheese.
  • Bake the muffins for 25 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack.
