Beef quesadillas

Cheesy, meaty tortilla casserole that's impossible to resist.
Ingredients:
  • 18.20 gm olive oil
  • 5 green onions, sliced
  • 500g beef mince
  • 5.00 gm ground cumin
  • 44.40 gm tomato paste
  • 84.15 gm beef stock
  • 400g can red kidney beans, drained, rinsed
  • olive oil cooking spray
  • 8 flour tortillas
  • 250.00 ml grated cheddar cheese
  • Tomato salsa, to serve
  • Sour cream, to serve
Instructions:
  • In a non-stick saucepan, heat oil over medium heat. Add onions and cook until soft, about 1-2 minutes. Increase heat to high, add mince, and cook for 5 minutes until browned while breaking it up with a wooden spoon. Stir in garlic, cumin, and tomato paste, cooking for 1 more minute until fragrant.
  • Pour in the flavorful stock and the hearty beans. Let it simmer gently until the beans are warmed through and the mixture has slightly thickened, about 3 to 5 minutes.
  • 1. Preheat oven to 180°C and heat a non-stick frying pan over medium heat. Lightly coat the pan with oil. 2. Lay one tortilla in the pan, spread a quarter of the meat mixture over it, sprinkle with a quarter of cheese, and top with another tortilla. Lightly spray the top tortilla with oil. 3. Cook for 1 to 2 minutes until the base is golden. Invert the quesadilla onto a plate, slide it back into the pan uncooked side down, and cook for another 1 to 2 minutes until golden. 4. Transfer the quesadilla to a baking tray and keep warm in the oven. Repeat the process with the remaining tortillas, meat, and cheese.
  • Serve the quesadillas on plates, cut them into quarters, and top with salsa and cream before serving.
