Mexican meatballs

Spice up traditional meatballs with a flavorful Mexican flair.
Ingredients:
  • 1kg lean beef mince
  • 1 red onion, finely chopped
  • 82.50 ml finely chopped fresh coriander
  • 1 egg
  • 20.00 gm taco seasoning
  • 36.40 gm olive oil
  • 1 red capsicum, halved, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 1 x 800g can diced tomatoes
  • Sour cream, to serve
  • Fresh coriander sprigs, to serve
  • Flour tortillas, to serve
  • 1 avocado, halved, stone removed, peeled
  • 18.80 gm sour cream
  • 1/2 ripe tomato, finely chopped
  • 1/4 small red onion, finely chopped
Instructions:
  • In a bowl, mix together the mince, onion, coriander, egg, and half of the taco seasoning. Shape 1 tablespoon of the mixture into a ball and place it on a plate. Repeat with the rest of the mince mixture.
  • In a large non-stick frying pan over medium-high heat, heat half of the oil. Cook one-third of the meatballs, turning, for 4-5 minutes until golden. Transfer to a clean plate. Repeat with the remaining meatballs in 2 more batches, ensuring the pan is reheated between batches.
  • Heat the rest of the oil in the pan over medium heat. Sauté capsicum and garlic for 3 minutes until soft. Sprinkle in the rest of the taco seasoning and cook for 1 minute until fragrant. Mix in the tomato. Lower the heat to medium and simmer for 5 minutes, stirring occasionally. Add the meatballs and simmer for 5 more minutes until the sauce thickens slightly.
  • Mash the avocado in a bowl using a fork, then mix in the sour cream, tomato, and onion.
  • Arrange the meatballs in serving bowls and generously top them with guacamole, sour cream, and fresh coriander. Serve alongside warm tortillas for a delightful meal.
