Taco Pork Meatballs

Elevate pork meatballs with Mexican cheese, taco seasoning, and spicy chile. Pair with guacamole for a tasty appetizer or mix up your taco night!
Ingredients:
  • 1 lb ground pork
  • 1 egg
  • 1/2 cup Progresso™ plain panko bread crumbs
  • 1/3 cup shredded Mexican cheese blend
  • 2 tablespoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped seeded serrano chile
  • 1/2 teaspoon salt
  • 1 medium avocado, pitted, peeled and diced
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro leaves
  • 1/4 teaspoon salt
Instructions:
  • Preheat oven to 400°F and line a 15x10x1-inch pan with foil, then spray with cooking spray.
  • Combine all Meatball ingredients in a large bowl until thoroughly mixed. Form the mixture into 20 (1 1/2-inch) meatballs and arrange them in a baking pan. Bake for 15 to 18 minutes until they reach an internal temperature of at least 165°F and are no longer pink in the center.
  • In a small bowl, combine avocado and lime juice, mashing with a fork until nearly smooth. Mix in 2 tablespoons of green onions, cilantro, and 1/4 teaspoon salt until well combined. Refrigerate until it's time to serve with the meatballs.
