Elevate Taco Tuesday with vibrant tropical flavors.
Ingredients:
  • 440g can pineapple pieces in juice
  • 1 long red chilli, seeded, finely chopped
  • 20.00 ml fresh coriander leaves, chopped, plus extra to serve
  • 27.30 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 500g pork mince
  • 1 garlic clove, crushed
  • 32.00 gm brown sugar
  • 85.80 gm tomato sauce
  • 42.00 gm soy sauce
  • 21.00 gm lime juice
  • 8 mini flour tortillas
  • 2 gem lettuces, leaves separated
Instructions:
  • 1. Strain pineapple over a bowl, saving the juice. Finely chop the pineapple. Mix pineapple with chili and coriander. Season with salt and pepper. Let sit for later use.
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil. Sauté onions for 5 minutes until softened. Add mince and cook for 5 minutes until cooked, breaking up lumps. Stir in garlic for 1 minute. Add sugar, tomato sauce, soy sauce, and pineapple juice. Season with salt and pepper. Simmer for 5 minutes until thickened. Remove from heat and stir in lime juice. Enjoy!
  • Heat more oil in a large frying pan over high heat. Cook each tortilla for 10 seconds per side until browned and heated through, adding more oil if necessary.
  • Distribute lettuce, minced mixture, and pineapple salsa evenly among tortillas. Garnish with extra coriander before serving.
