Kid-approved Mexican meatballs with zesty tomato salsa.
Ingredients:
  • 750g turkey mince or chicken mince
  • 1 small brown onion, grated
  • 35g packet salt-reduced taco seasoning mix
  • 250.00 ml fresh white breadcrumbs
  • 125.00 ml coriander leaves, finely chopped
  • Corn chips, to serve
  • 2 tomatoes, seeds removed, diced
  • 1 avocado, diced
  • 310g can corn kernels, drained
  • 125.00 ml coriander leaves, chopped
  • 1 lime, juiced
Instructions:
  • Preheat your oven to 200C and prepare a large baking tray by lining it with baking paper.
  • Prepare a refreshing tomato salsa by tossing together diced tomato, creamy avocado, sweet corn kernels, fresh coriander, and zesty lime juice in a mixing bowl. Add a sprinkle of salt and pepper for flavor enhancement. Chill in the refrigerator until it's time to enjoy.
  • In a large bowl, mix together mince, onion, taco seasoning mix, breadcrumbs, and coriander until well combined. Shape mixture into tablespoon-sized balls and place on a baking tray. Spray with oil and bake for 20 minutes or until fully cooked. Serve with tomato salsa and corn chips.
