Ingredients:
  • 266.00 gm white long-grain rice
  • 36.40 gm olive oil
  • 700g pork fillet, cut into 1cm-thick slices
  • 1 medium brown onion, thinly sliced
  • 1 medium red capsicum, thinly sliced
  • 1 medium green capsicum, thinly sliced
  • 35g packet taco seasoning
Instructions:
  • Prepare fragrant rice in a generous pot of boiling water according to package instructions until perfectly tender, then drain well.
  • Heat a generous amount of oil in a spacious frying pan over medium-high heat. Sear pork in batches until beautifully browned, about 3 to 4 minutes per batch. Place on a plate to rest.
  • Heat the rest of the oil in a pan then toss in the onion and capsicum. Stir and sauté for 3 to 4 minutes until they are just tender. Add the pork back into the pan along with the seasoning and 3/4 cup of cold water. Stir and cook for 1 to 2 minutes until the sauce thickens and heats through. Serve with rice.
