Ingredients:
  • 40g packet fajita seasoning
  • 500g pork stir-fry strips
  • 36.80 gm rice bran oil
  • 1 brown onion, cut into wedges
  • 1 large red capsicum, sliced
  • 125.00 ml fresh coriander leaves
Instructions:
  • Combine seasoning and pork in a bowl. Mix until well coated.
  • In a wok, heat half of the oil over high heat until shimmering. Quickly stir-fry the pork in batches for 2 to 3 minutes until golden brown, adding more oil if necessary. Transfer the cooked pork to a bowl.
  • Pour the rest of the oil into a hot wok. Lower the heat to medium-high. Stir-fry onion and capsicum for 2 to 3 minutes until the onion softens.
  • Add the pork back to the wok and pour in 1/3 cup of cold water. Stir-fry for 1 to 2 minutes until the sauce slightly thickens. Mix in half of the coriander, then garnish with the rest. Serve and enjoy!
