Tender pork chops on flavorful Mexican-style rice, a simple anytime meal with pantry staples.
Ingredients:
  • cooking spray
  • 2 tablespoons vegetable oil
  • 6 boneless pork chops
  • 3 cups water
  • 1.5 cups uncooked long-grain white rice
  • 1 (8 ounce) can tomato sauce
  • 0.5 cup picante sauce
  • 0.25 cup taco seasoning mix
  • 1 green bell pepper, sliced
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give your 9x13-inch baking dish a nice coating of cooking spray.
  • In a large skillet over medium heat, heat vegetable oil until shimmering. Season pork chops with salt and black pepper, then sear until golden brown on both sides, approximately 5 minutes each side. Transfer chops to a plate and set aside.
  • Combine water, rice, tomato sauce, picante sauce, and taco seasoning in the baking dish. Arrange the chops over the rice mixture, then layer with green bell pepper slices. Cover the dish before baking.
  • Roast until the chops are cooked through and the rice is tender, approximately 1 hour. Use an instant-read thermometer to ensure the chops reach 145°F (63°C). Uncover, and add a generous sprinkle of Cheddar cheese on top.
  • Place back in the oven, and bake without a cover until the cheese is melted and bubbling, for an additional 5 to 10 minutes.
