Slow-Cooker Barbecued Pulled-Pork Fajitas

Serve up delicious and easy-to-eat hot sandwiches for your next gathering.
Ingredients:
  • 1 pork boneless loin roast, (2 1/2 pounds), trimmed on fat
  • 1 medium onion, thinly sliced
  • 2 cups barbecue sauce
  • 3/4 cup thick & chunky salsa
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 bag (1 pound) frozen stir-fry bell peppers and onions
  • 18 tortillas from 3 packages (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Shredded cheese, if desired
  • Guacamole, if desired
  • Sour cream, if desired
Instructions:
  • Add the pork to a 3- to 4-quart slow cooker followed by the onion. Combine barbecue sauce, salsa, chili powder, and cumin in a small bowl, then pour over the pork and onion.
  • Simmer covered on Low heat for 8 to 10 hours.
  • Take out the pork from the cooker and transfer it to a cutting board. Pull apart the pork using 2 forks. Put the shredded pork back into the cooker and mix thoroughly. Add stir-fry vegetables and salt, then turn up the heat to High. Cover and cook for 30 minutes or until the mixture is hot and the vegetables are tender.
  • With a slotted spoon, scoop the pork mixture from the cooker and place 1/2 cup onto each tortilla. Fold one end of the tortilla up about 1 inch over the filling, then fold the right and left sides over the folded end, overlapping. Finally, fold the remaining end down. Enjoy with cheese, guacamole, and sour cream.
