Try this quick and delicious Mexican pork roast with corn and crispy potatoes for a perfect weeknight meal.
Ingredients:
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2.50 gm ground paprika
  • 800g pkt Roast Potatoes Traditional
  • 2 corn cobs, halved
  • 550g pork fillet
  • 27.30 gm olive oil
  • 4 Roma tomato, finely chopped
  • 1 avocado, finely chopped
  • 1/2 red onion, finely chopped
  • 125.00 ml coarsely chopped coriander
  • 1 green chilli, deseeded, finely chopped (optional)
  • 21.00 gm lime juice
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and place a large baking tray inside.
  • Mix spices in a small bowl. Place potatoes in a dish, spray lightly with oil, and sprinkle with half of the spice mixture. Toss to coat. Roast on a hot tray with corn for 15 minutes.
  • Next, place the pork in the same shallow dish. drizzle with 2 teaspoons of oil and add the remaining spice mixture. Season the pork and turn to ensure it is evenly coated. In a large bowl, mix together the tomato, avocado, onion, coriander, optional chili, lime juice, and the remaining oil. Season the mixture and gently toss to coat everything well.
  • 1. Preheat a medium frying pan over medium-high heat. Sear pork for 2 minutes until golden. Place pork and potatoes on a baking tray. Roast for 15 minutes. Rest pork on a plate, covered loosely with foil for 5 minutes. Continue roasting potatoes for extra 5 minutes until crispy.
  • Arrange the tender sliced pork with a side of roasted potatoes, sweet corn, and zesty salsa for a delightful and satisfying meal.
