Elevate Spring vegetables with flavorful Old El Paso® taco seasoning!
Ingredients:
  • 2 teaspoons grated lemon peel
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon plus 1 teaspoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 1/2 lb fresh asparagus spears
Instructions:
  • Preheat oven to 425°F. Line two 15x10x1-inch pans with foil and reserve lemon peel for later.
  • In a small bowl, combine lemon juice, oil, and 1 tablespoon plus 1 teaspoon of taco seasoning mix; set aside. Wash the asparagus and trim off the tough ends. Optionally, peel the stems. Place the asparagus in a pan, drizzle with the oil mixture, and toss until evenly coated. Spread the asparagus in a single layer across the pans.
  • Roast the asparagus uncovered for 10 to 15 minutes until it reaches a crisp-tender texture, then sprinkle with fresh lemon peel for a bright, zesty finish.
