Try this Mexican twist on Shepherd's Pie for a quick and budget-friendly family dinner. Kids approved! Pair with a side salad for a complete meal.
Ingredients:
  • 1.5 pounds ground beef
  • 1 onion, finely chopped
  • garlic powder to taste
  • salt and pepper to taste
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (1.25 ounce) package taco seasoning mix
  • 0.75 cup hot water
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (8.5 ounce) package corn muffin mix
  • 1 cup shredded Cheddar cheese
  • 1 (2.25 ounce) can sliced black olives
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) while you give your 9x13 inch baking dish a quick spritz with cooking spray.
  • In a skillet over medium heat, cook the beef and onion until beef browns and onion softens. Drain excess grease, then season with garlic powder, salt, and pepper. Add the tomatoes and cook for 5 minutes. Stir in the taco seasoning and water, bring to a boil, then simmer on low for 5 minutes until thickened. Transfer to a baking dish and evenly top with corn.
  • Follow the instructions on the corn muffin mix package, then evenly spread it over the layer of corn in the baking dish.
  • Bake until puffed and golden in the preheated oven for about 20 minutes. Top with olives and cheese before serving.
