Spicy shrimp cocktail with avocado, red onion, and cilantro.
Ingredients:
  • 2 pounds cooked shrimp, peeled and deveined
  • 0.5 cup finely chopped red onion
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon crushed garlic
  • 1.5 cups tomato and clam juice cocktail
  • 0.25 cup ketchup
  • 0.25 cup fresh lime juice
  • 0.25 cup prepared horseradish
  • 1 teaspoon hot pepper sauce, or to taste
  • 1 ripe avocado - peeled, pitted and chopped
Instructions:
  • Prepare all your ingredients.
  • In a large bowl, combine shrimp with red onion, cilantro, and garlic.
  • Combine tomato and clam juice, ketchup, lime juice, horseradish, and hot pepper sauce in a bowl; mix thoroughly. Season with salt to taste.
  • Delicately fold in ripe avocado. Chill, covered, for 2 to 3 hours in the refrigerator.
