Elegant shrimp cocktail with zesty tomato salsa, served in a glass bowl and paired with saltine crackers.
Ingredients:
  • 4 roma (plum) tomatoes, diced
  • 1 cup sweet onion (such as Vidalia®), diced
  • 0.5 cup ketchup
  • 0.5 cup tomato and clam juice cocktail
  • 0.5 cup prepared salsa
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons prepared salsa verde
  • 2 teaspoons lime juice
  • 2 teaspoons hot pepper sauce (such as Tapatio®)
  • 1 clove garlic, minced
  • 1 pound frozen cooked shrimp - thawed, peeled, and deveined
  • 2 ripe avocados - peeled, pitted, and cubed
Instructions:
  • Combine ripe roma tomatoes, sweet onion, ketchup, tomato and clam juice cocktail, salsa, fresh cilantro, salsa verde, zesty lime juice, hot pepper sauce, and minced garlic in a large glass bowl. Chill in the refrigerator for approximately 1 hour. Remove tails from shrimp and delicately mix into the tomato blend. Gently fold in diced avocado to complete the shrimp cocktail.
