Spice up pork cutlets with zesty Mexican flavors and pair with refreshing corn salsa for a quick and healthy mid-week fiesta.
Ingredients:
  • 35g packet taco seasoning mix
  • 36.40 gm olive oil
  • 4 (200g each) pork loin cutlets (see note)
  • Mixed salad leaves, to serve
  • Lime wedges, to serve
  • 500.00 ml frozen corn kernels
  • 200g cherry tomatoes, quartered
  • 1 small red onion, finely chopped
  • 82.50 ml fresh coriander leaves, chopped
  • 1 lime, juiced
Instructions:
  • Preheat a non-stick pan over medium-high heat. Mix taco seasoning and oil in a small bowl. Coat both sides of the pork with the mixture. Sear pork for 4 to 5 minutes per side until desired doneness. Transfer to a plate, cover with foil, and let rest.
  • Create corn salsa by boiling corn in a saucepan until tender, then drain. Mix the corn with tomatoes, onion, coriander, oil, and 2 tablespoons of lime juice in a bowl, tossing gently to combine.
  • Plate the corn salsa, layer pork on top, and serve alongside a fresh salad and lime wedges.
