Spicy chipotle cream cheese spread on tortillas, stuffed with black beans, salsa, avocado, and chilled for a delicious bite-sized appetizer.
Ingredients:
  • 3 ounces low-fat cream cheese, softened
  • 1.5 tablespoons seeded and finely chopped chipotle in adobo
  • 1 large plain flour tortilla
  • 1 large tomato-flavored tortilla
  • 1 large spinach-flavored tortilla
  • 0.75 cup low-fat refried black beans
  • 6 tablespoons pico de gallo salsa
  • 1.5 Avocados from Mexico, peeled, pitted and diced
  • 0.75 cup chopped cilantro leaves
Instructions:
  • Combine the cream cheese with chipotle to create a flavorful spread. Warm the tortillas in the microwave or oven until they are soft. Spread each tortilla with a generous amount of the chipotle cream cheese mixture, followed by a quarter cup of black beans and a couple of spoonfuls of salsa. Sprinkle a portion of the avocado and cilantro over each tortilla.
  • Roll tortillas tightly, wrap in plastic wrap, and chill. Unwrap, trim ends, and slice each roll into 6 pieces before serving.
