Savor the comforting flavors of Mexican-inspired meatloaf featuring zesty seasonings, crushed tortilla chips, savory beef, melty pepper Jack cheese, onions, and a drizzle of tangy taco sauce.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 small onion, chopped
  • 1 cup crushed tortilla chips
  • 0.75 cup shredded pepper Jack cheese
  • 1 (1 ounce) packet taco seasoning mix
  • 2 large eggs, beaten
  • 0.5 cup milk
  • 0.25 cup mild red taco sauce, or more to taste
Instructions:
  • Collect all your ingredients and preheat the oven to 350°F (175°C).
  • Combine the beef, onion, tortilla chips, pepper Jack cheese, and taco seasoning in a large bowl, mix thoroughly.
  • Combine eggs, milk, and taco sauce in a medium bowl and whisk until smooth.
  • Combine the beef mixture and stir until fully incorporated.
  • Spread the mixture evenly in a 9x5x3-inch loaf pan, then add a generous line of taco sauce through the center of the loaf.
  • Bake in the preheated oven for 45 to 60 minutes until golden brown on top and an instant-read thermometer inserted into the center reads at least 160°F (72°C).
