Mexican-style taco meat rolled into a flavorful loaf.
Ingredients:
  • 2 pounds lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 4 (8 inch) flour tortillas
  • 0.75 cup fresh salsa
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Combine the ground beef and taco seasoning in a bowl, ensuring they are mixed well. Warm the refried beans in a saucepan over medium low heat until heated through.
  • Spread a layer of ground beef mixture onto a large piece of foil, forming a 1-inch thick square. Top with refried beans, followed by flour tortillas trimmed to fit. Add salsa and Cheddar cheese on top, leaving a small border around the edges of the square.
  • Roll the beef layers into a Swiss roll shape, compacting the loaf as you go and sealing the edges. Wrap tightly in foil to seal.
  • Bake in a preheated oven for 40 to 45 minutes, or until the center is no longer pink. Check for doneness by cutting the loaf in half, if needed.
