Spicy chicken and pork meatloaf infused with salsa, taco seasoning, pepper Jack cheese, and seasoned croutons for a flavorful Tex-Mex twist.
Ingredients:
  • 1 egg
  • 1.25 cups herb-seasoned croutons
  • 1 (12 ounce) jar salsa
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 1 jalapeno pepper, seeded and minced
  • 3 cloves garlic, minced
  • 1 pound ground chicken
  • 0.5 pound ground pork
  • 1 cup shredded pepperjack cheese
  • 0.25 cup cilantro, minced
  • 1.5 tablespoons taco seasoning mix
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons barbecue sauce
  • 2 tablespoons brown sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Combine croutons and salsa in a generous-sized bowl, allowing them to meld together and soften for approximately 15 minutes.
  • In a skillet over medium heat, sauté onion, jalapeño pepper, and garlic in olive oil until onion is translucent, about 5 to 8 minutes. Take off the heat.
  • Combine ground chicken, ground pork, pepper Jack cheese, cilantro, egg, taco seasoning, Worcestershire sauce, and crouton mixture; ensure all croutons are mashed. Add mixture to skillet with onion mixture, then transfer to the loaf pan.
  • Combine the barbecue sauce and brown sugar in a small bowl, stirring until the sugar has dissolved. Brush this delicious glaze over the meatloaf, then cover it with a tent made of a 12-inch piece of aluminum foil.
  • Roast in the oven until fully cooked in the center and juices are clear, around 1 hour. Uncover for the final 10 minutes. Check with a meat thermometer – it should register a minimum of 165°F (75°C). Rest the meatloaf, covered with foil, for 15 minutes before slicing.
