Fruity and tangy Mexican tamarind candy with Tajin® for all ages to enjoy.
Ingredients:
  • 1 pound tamarind pods, peeled
  • 1 orange, peeled and segmented
  • 4 cups white sugar
  • 4 tablespoons chile-lime seasoning (such as Tajin®), or more to taste
  • 1 tablespoon butter
Instructions:
  • In a pot, simmer tamarind pulp, water, and orange for 30 minutes. Allow to cool for 30 minutes after removing from heat.
  • Strain tamarind mixture through a colander into a large bowl, pressing and scraping to extract all the juice and pulp. Discard seeds in a strainer, remove outer casing, and discard seeds.
  • Puree the outer casings with the juicy pulp in a blender.
  • Pour the mixture back into the large pot and stir in the sugar, Tajin®, and butter. Cook over medium heat, stirring constantly until it reaches 240 degrees F (115 degrees C) or until a small amount dropped into cold water forms a soft ball that flattens when placed on a flat surface.
  • Allow the mixture to cool off the heat for approximately 2 hours.
  • Transfer the candy mixture into a pastry or plastic sandwich bag, then pipe it onto plastic spoons. Arrange the spoons on a baking sheet and refrigerate until set, approximately 1 hour. Optionally sprinkle more Tajin® on top, wrap each spoon with plastic wrap, and secure with a twist tie.
