Ingredients:
  • 1.5 teaspoons vegetable oil
  • 0.5 small small onion, diced
  • 0.66666698455811 cup uncooked long-grain rice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 3 ounces canned diced tomatoes
  • 1 teaspoon salt
  • 1.5 cups water
Instructions:
  • In a large saucepan over medium heat, sauté onion in oil until soft and translucent.
  • Coat rice with oil, then add cumin, chili powder, tomatoes, salt, and water. Bring to a boil, cover, and simmer on low for 20 to 30 minutes until rice is tender, stirring occasionally.
