Effortlessly flavorful Mexican tomato rice - perfect for a quick TV commercial break cooking session. Substitute with chicken bouillon if needed.
Ingredients:
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon chili powder
  • 1 tablespoon ground cumin
  • 1 cup uncooked short-grain white rice
  • 1.75 cups chicken broth
  • 0.25 cup tomato paste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large skillet, warm the oil over medium heat. Saute the onion and garlic until the onion is translucent. Mix in the chili powder and cumin for 30 seconds. Add the rice, chicken broth, and tomato paste; bring to a boil. Transfer everything to a 1 quart casserole dish and cover.
  • Bake until rice is tender and liquid is absorbed, about 35-40 minutes. Allow to rest for 3-5 minutes before serving.
