Decadent Mexican cake soaked in a trio of milks: condensed milk, evaporated milk, and cream.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 6 eggs, separated
  • 0.5 cup white sugar, divided
  • 1 cup self-rising flour
  • 1 lime, zested
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1 cup heavy whipping cream
  • 1 teaspoon amaretto liqueur
  • 1 (4 ounce) container sliced peaches, drained
  • 1 teaspoon grated lime zest
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9-inch springform pan with butter and a dusting of flour.
  • In a glass, metal, or ceramic bowl, whip egg whites until frothy. Slowly sprinkle in 1/4 cup sugar while beating until stiff peaks form. Rinse beaters.
  • Whisk egg yolks in a separate bowl until creamy, then mix in 1/4 cup sugar until pale yellow. Gently fold the egg yolk mixture into the beaten egg whites. Gradually sift in flour and fold it gently into the batter, then add the zest of 1 lime. Pour the batter into the prepared springform pan.
  • Bake until the edges pull away from the sides of the pan, about 30 minutes. Then let cake rest in the warm oven, with the heat turned off, for an extra 20 minutes.
  • While the cake is baking, create the '3 milks' mixture. Blend condensed milk, evaporated milk, 1 cup heavy cream, and amaretto liqueur in a blender until smooth.
  • Transfer the cake from the springform pan to a serving plate. Using a fork, generously pierce the cake all over. Pour the '3 milks' mixture evenly over the cake. Chill in the refrigerator until the cake is cool and the milk mixture has fully soaked in, approximately 1 hour.
  • Whip 1 cup of heavy cream in a chilled glass or metal bowl using an electric mixer until soft peaks form. Top the cake with the whipped cream, peach slices, and 1 teaspoon of lime zest for a delightful finish.
