Indulge in a rich and moist Mexican tres leches cake with a delicious surprise layer of dulce de leche.
Ingredients:

  • 6 eggs, separated
  • 0.5 cup white sugar, divided
  • 0.5 cup all-purpose flour, sifted
  • 1 lime, zested
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup heavy whipping cream
  • 0.5 cup dulce de leche
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C), then prepare a 9x13-inch baking pan by greasing it and dusting with flour.
  • Whisk egg whites in a glass, metal, or ceramic bowl until frothy. Gradually sprinkle in 1/4 cup of sugar while continuing to whisk until stiff peaks form and the sugar is fully incorporated.
  • Whisk egg yolks in a separate bowl until creamy, then add the remaining 1/4 cup sugar and beat until pale yellow and creamy. Gently fold into egg whites.
  • In a bowl, combine flour and baking powder. Gently stir in the egg mixture and lime zest. Transfer the batter to the prepared baking pan.
  • Bake in the preheated oven for 30 minutes until lightly golden. Allow the cake to sit in the turned-off oven for an additional 15 minutes.
  • Combine condensed milk, evaporated milk, and heavy cream in a bowl, stirring until fully incorporated.
  • Using a fork, generously poke holes all over the cake's surface. Gently pour the mixture of three milks over the cake, ensuring even coverage. Chill in the refrigerator for an hour to let the milk mixture saturate the cake. Finish by spreading a layer of dulce de leche on top.
