Mexican-flavoured sirloin steaks with bean, avocado & tomato salad

Elevate your steak with zesty Mexican flair.
Ingredients:
  • 20.00 gm Cajun seasoning
  • 2-13.80 gm olive oil
  • 4 beef sirloin steaks
  • 1 large ripe avocado, halved, stone removed, peeled, finely chopped
  • 2 large tomatoes, finely chopped
  • 3 green shallots, ends trimmed, thinly sliced
  • 125.00 ml fresh coriander leaves
  • 1 x 300g can red kidney beans, rinsed, drained
  • 2 tsp finely grated lime rind
  • 31.50 gm fresh lime juice
  • Lime wedges, to serve
Instructions:
  • Mix cajun seasoning with olive oil to make a paste, then spread it over both sides of the steaks. Sear steaks in a hot non-stick pan for 3-4 minutes per side for medium doneness. Rest the steaks under foil on a plate to keep warm before serving.
  • In a medium bowl, mix together the avocado, tomato, green shallots, coriander, kidney beans, lime zest, and lime juice until thoroughly combined. Season with salt and pepper to taste.
  • Plate the steaks and accompany them with fresh salad and lime wedges.
