Spice up your breakfast with a Mexican-inspired egg, ham, and hash brown casserole featuring zesty cheese, green chiles, and taco seasoning. Perfect for pleasing the whole family.
Ingredients:
  • 1 medium onion, chopped
  • 5 cups shredded hash brown potatoes
  • 3 cups diced ham
  • 2 cups shredded taco-flavored cheese
  • 1 (7 ounce) can diced green chile peppers
  • 8 large eggs
  • 1 cup sour cream
  • 1 teaspoon taco seasoning mix, or more to taste
  • 1 cup shredded Mexican blend cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch pan with cooking spray.
  • Heat a small pan over medium heat and add cooking spray. Cook onion until softened and translucent, about 5 minutes.
  • Combine onions with hash browns, ham, taco-flavored cheese, and chile peppers in a large bowl, then spread evenly in the prepared pan.
  • Combine eggs, milk, sour cream, and taco seasoning in a bowl, then pour over the hash brown layer.
  • Bake in the preheated oven for 45 to 60 minutes, checking every 5 minutes towards the end until a knife inserted into the center comes out clean.
  • Take out from the oven and generously sprinkle Mexican cheese on top. Place back in the oven and bake until the cheese is melted, approximately 3 minutes. Allow the casserole to rest for 5 minutes before serving to let the flavors settle.
