Delicious and vibrant Mexican omelette for a breakfast twist.
Ingredients:
  • 1/2 small red capsicum, finely chopped
  • 2 shallots, thinly sliced
  • 1 small fresh red chilli, finely chopped
  • 20.60 gm milk
  • Salt & freshly ground pepper
  • 9.20 gm oil
  • 40.00 ml chopped fresh coriander
  • 10.60 gm lime juice
Instructions:
  • Mix together the capsicum, shallots, and chilli. Whisk eggs and milk with a fork until well combined. Season generously with salt and pepper.
  • In a small non-stick pan, heat oil over medium-high heat. Add half of the capsicum mixture and cook for 2 minutes. Pour in the eggs and cook over medium heat for 7-9 minutes until set.
  • Gently transfer the omelette to a serving plate. Mix coriander and lime juice into the leftover capsicum mixture. Season with salt and pepper. Spoon over the omelette and serve right away.
