Mexican-style omelette wrap

Vibrant tomato omelette bursting with flavor and packed with Vitamin C for a healthy start to your day!
Ingredients:
  • 2 teaspoons chipotle Tabasco sauce
  • 2 limes
  • 1 bunch of fresh coriander
  • 1 tablespoon red wine vinegar
  • 5 large mixed-colour tomatoes
  • 50 g baby spinach
  • 6 large free-range eggs
  • 20 g Parmesan cheese
Instructions:
  • In a jam jar, combine Tabasco, lime juice, and black pepper. Close the lid tightly and shake well. Set aside lime wedges. Finely slice spring onions and chop coriander, reserving some for later. Mix spring onions, coriander, red wine vinegar, and salt in a bowl. Add chopped tomatoes and spinach, and mix. In a separate bowl, whisk eggs with water, salt, and pepper. Heat oil in a pan, cook a quarter of the egg mixture, sprinkle with cheese, then fold and transfer to a plate. Top with salad, chipotle dressing, and reserved coriander. Serve with lime wedges. Repeat with remaining ingredients. Enjoy!
