Energize your omelette with zesty chili, tangy lime, and fragrant coriander for a vibrant Mexican twist.
Ingredients:
  • 1/2 small red capsicum, finely chopped
  • 2 shallots, thinly sliced
  • 1 small fresh red chilli, finely chopped
  • 2 eggs
  • 20.60 gm milk
  • Salt & freshly ground pepper
  • 9.20 gm vegetable oil
  • 40.00 ml chopped fresh coriander
  • 10.60 gm lime juice
Instructions:
  • Mix together capsicum, shallots, and chilli in a bowl. In a separate bowl, whisk eggs and milk, then season generously with salt and pepper.
  • In a small (16cm base) non-stick frying pan over medium-high heat, sizzle the vibrant capsicum mixture for 2 minutes. Pour in the eggs, lower the heat to medium, and cook for 7-9 minutes until beautifully set. Gently flip onto a serving plate.
  • Mix the coriander and lime juice with the rest of the capsicum mixture. Season with salt and pepper. Drizzle over the omelette and serve promptly.
