Spicy Mexican-style scrambled eggs with bell peppers and jalapeno for a flavorful breakfast twist.
Ingredients:
  • 0.5 cup diced onion
  • 0.25 cup milk
  • 2 tablespoons diced green bell pepper
  • 2 tablespoons diced red bell pepper
  • 1 jalapeno pepper, seeded and diced
  • 2 teaspoons Mexican-style chile powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground cumin
  • 1 dash ground cinnamon
Instructions:
  • Combine the eggs in a bowl with the onion, milk, green bell pepper, red bell pepper, jalapeno pepper, chile powder, onion powder, cumin, cinnamon, salt, and pepper, and whisk until well blended.
  • Preheat a large skillet over medium-high heat and lightly grease with cooking spray. Pour in the egg mixture and cook until both sides are golden brown, around 5 minutes each.
