Savor spicy Mexican chorizo with scrambled eggs for a satisfying and flavorful breakfast, best paired with warm tortillas.
Ingredients:
  • Extra virgin olive oil or bacon fat
  • 1/3 cup chopped onions (green, red, or yellow onions) optional
  • 1/4 pound of Mexican chorizo sausage, removed from sausage casing
  • 3 tablespoons raisins - soaked in hot water for 10 minutes and drained
  • 5 to 6 eggs
  • Salt
  • Tortillas - optional
  • Cilantro - optional
Instructions:
  • Caramelize the onions: In a large skillet over medium-high heat, heat a tablespoon of olive oil or bacon fat. Sauté the chopped onions until they are soft and golden brown.
  • Sear chorizo, raisins, and onions in the pan: After softening the onions, push them to the side and introduce chunks of chorizo. Break up the sausage pieces with a wooden spatula and incorporate the raisins. Cook until the chorizo is fully cooked, then drain any excess fat if needed.
  • Crack and stir the eggs into the sausage, adding a light sprinkle of salt. Stir constantly until the eggs start to set but are still moist. Remove from heat and serve with warmed corn tortillas and a garnish of cilantro.
