Meyer Lemon Curd

Luscious Meyer lemon curd, quick and easy to make for a perfect tart filling or spread.
Ingredients:
  • 2 cups white sugar
  • 0.75 cup butter, at room temperature
  • 4 eggs
  • 4 egg yolks
  • 1.3333333730698 cups Meyer lemon juice
  • 2 teaspoons grated Meyer lemon zest
Instructions:
  • Cream butter and sugar together in a large bowl using an electric mixer until creamy, about 2-3 minutes on low speed. Add eggs and yolks one at a time until well mixed. Stir in lemon juice and transfer to a saucepan.
  • Gently cook the mixture over low heat until smooth. Increase heat to medium, and simmer while stirring constantly until the curd thickens enough to coat a spoon and reaches 170 degrees F (77 degrees C) on a candy thermometer, about 15 to 30 minutes. Remove from heat and stir in lemon zest.
  • Place the curd into a bowl and cover the surface with plastic wrap to prevent a skin from forming as it cools. Let it cool for around 10 minutes, then refrigerate until thick.
