Cinnamon roll-inspired whole-grain waffles with a cinnamon drizzle and icing. Delicious twist on a classic treat!
Ingredients:
  • non-stick cooking spray
  • 2 cups whole wheat and flax flour (such as Robin Hood® Nutri Flour Blend™ Omega-3 & Fibre)
  • 1 teaspoon white sugar
  • 0.5 teaspoon baking soda
  • 2 cups buttermilk
  • 5 tablespoons melted butter, divided
  • 0.75 cup brown sugar
  • 0.375 cup hot water
  • 1 tablespoon ground cinnamon
  • 0.75 cup confectioners' sugar
  • 2 tablespoons skim milk, or as needed
Instructions:
  • Preheat the waffle iron following the manufacturer's directions and then coat with non-stick cooking spray.
  • In a large bowl, whisk together whole wheat flax flour, white sugar, baking powder, and baking soda. In a separate bowl, whisk together eggs, buttermilk, 1 tablespoon melted butter, and vanilla extract. Pour the wet ingredients into the flour mixture and stir until just combined.
  • Pour a generous amount of batter into the waffle iron and bake until it turns a delicious golden brown, which should take approximately 2 minutes. Repeat with the rest of the batter, ensuring your waffles stay warm for serving.
  • Combine brown sugar, 3 tablespoons melted butter, hot water, and cinnamon in a small microwave-safe bowl. Microwave on High for about 10 seconds until mixture is a pourable cinnamon drizzle.
  • Combine confectioners' sugar, skim milk, and 1 tablespoon melted butter in a small bowl, whisking until the icing is smooth and pourable.
  • Lay 2 waffles on a plate and generously drizzle with 2 tablespoons of cinnamon drizzle, followed by 2 tablespoons of sweet icing drizzle.
