Microwave beef stroganoff that rivals the stove top version.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 44.40 gm tomato paste
  • 125.00 ml plain flour
  • 15.00 gm paprika
  • 1kg beef rump steak, cut into strips
  • 420g can cream of mushroom soup
  • 382.50 gm beef stock
  • 41.60 gm tomato sauce
  • 24.40 gm Worcestershire sauce
  • 100g mushrooms, thinly sliced
  • 117.50 gm sour cream
  • 82.50 ml flat-leaf parsley leaves, chopped
  • steamed rice, to serve
Instructions:
  • In a 2-liter dish, combine oil and onion, then microwave uncovered on HIGH for 2 minutes. Stir in tomato paste and microwave for another 1 minute on HIGH.
  • Mix together the flour, paprika, salt, and pepper to create a flavorful seasoning. Toss the beef in the seasoned mixture. Add the seasoned beef to the onion mixture. Stir in the soup, stock, and sauces. Cover and microwave on DEFROST-MEDIUM LOW (30%) power for 1 hour, stirring every 10 minutes to ensure even cooking.
  • Combine mushrooms and sour cream, then microwave for 10 minutes on the same power setting. Finish by sprinkling with parsley and serve alongside rice.
