Ingredients:
  • 1 medium sweet potato, about 10 ounces
  • 1/2 teaspoon olive or canola oil, optional
  • 1/4 teaspoon kosher salt, optional
Instructions:
  • To crisp the sweet potato skin, preheat oven to 425°F. Wash sweet potato, leaving some moisture for tenderness. Use a fork to prick sweet potato 4 to 5 times.
  • Wrap the sweet potato tightly with a damp paper towel and place it on a microwave-safe plate or in a lidded container with the lid slightly cracked.
  • Microwave the sweet potato on high power for 5 minutes, ensuring it is tender all the way through by piercing with a fork or paring knife. If needed, microwave for an additional minute. Note the ideal size and timing for your microwave for consistent results.
  • For an irresistible crunch, remove the sweet potato from its wrapper, lay it on a baking sheet, and generously brush with oil. Add a sprinkle of salt for extra flavor.
