Microwave sweet potatoes, then bake in a rich orange-ginger sauce.
Ingredients:
  • 2.5 pounds sweet potatoes
  • 2 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 0.5 teaspoon ground ginger
  • 0.5 cup orange juice
  • 3 tablespoons butter
Instructions:
  • Using a fork, create small punctures all over the sweet potatoes' skin.
  • Microwave sweet potatoes until tender, for 12 to 15 minutes. Chill in the refrigerator until completely cooled, for at least 20 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) and coat a shallow 1 1/2-quart baking dish with cooking spray.
  • Peel the sweet potatoes and dice them before spreading them in the baking dish.
  • Combine sugar, cornstarch, salt, and ginger in a glass measuring cup. Slowly add orange juice while whisking until smooth.
  • Microwave the orange juice mixture for 1 minute, stir well, then heat for an additional 30 to 60 seconds until thick and smooth. Mix in the butter until melted, then pour over the sweet potatoes.
  • Bake in a hot oven until sweet potatoes are warmed for 15 to 20 minutes.
