Gingered Fruit Salsa with Crispy Cinnamon Chips

Create a refreshing ginger fruit salsa served with sweet and spicy tortilla chips.
Ingredients:
  • 1 tablespoon sugar
  • 2 teaspoons ground cinnamon
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 3 tablespoons butter or margarine, melted
  • 1 cup finely diced pineapple
  • 1 cup finely diced papaya
  • 1 cup finely diced mango
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon finely chopped crystallized ginger
  • 1 tablespoon lemon juice
Instructions:
  • Preheat oven to broil. Combine sugar and cinnamon. Brush butter on both sides of each tortilla, then sprinkle with sugar-cinnamon mixture. Cut each tortilla into 12 wedges.
  • Spread out the tortilla wedges evenly on 2 ungreased 15x10x1-inch pans or 2 cookie sheets. Broil for 2 to 4 minutes, flipping halfway through, until they are crispy and golden brown. Let them cool completely for about 15 minutes before serving.
  • Combine all the remaining ingredients in a medium bowl and serve the salsa with chips.
