Citrus chicken salad on spinach with fruit, pecans - quick, delicious dinner in 25 mins.
Ingredients:
  • 1/2 teaspoon grated lime peel
  • 2 tablespoons fresh lime juice
  • 1 tablespoon canola oil
  • 1 tablespoon water
  • 2 teaspoons honey
  • 1/2 teaspoon ground ginger
  • 6 cups fresh baby spinach leaves
  • 1 1/2 cups cubed cooked chicken breast
  • 1 ripe medium mango, seed removed, peeled, cubed
  • 1 cup seedless red grapes, halved
  • 2 medium green onions, sliced (2 tablespoons)
  • 2 tablespoons coarsely chopped pecans, toasted
Instructions:
  • Combine dressing ingredients in a container with a tight-fitting lid and shake vigorously until well combined.
  • Separate the spinach evenly onto 4 plates. Layer each with chicken, mango, grapes, onions, and pecans. Finish with a generous drizzle of dressing.
