Chicken with Gingered Brown Rice

Try this delectable baked chicken and rice dish for a satisfying dinner option.
Ingredients:
  • 1 cup uncooked long-grain brown rice
  • 2 3/4 cups water
  • 2 tablespoons orange juice
  • 1 small onion, finely chopped (1/4 cup)
  • 3 tablespoons finely chopped crystallized ginger
  • 2 tablespoons chopped fresh parsley or 2 teaspoons parsley flakes
  • 3/4 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 3 tablespoons orange marmalade
  • 1 tablespoon canola oil
Instructions:
  • Prepare the brown rice according to the package instructions, and drain if needed.
  • Preheat oven to 350°F and grease an 8-inch square glass baking dish. In a 2-quart saucepan, bring 1 tablespoon of orange juice to a boil over medium heat. Sauté onion in the orange juice for 1 to 2 minutes until crisp-tender. Add cooked rice, ginger, parsley, thyme, and the remaining 1 tablespoon of orange juice to the pan.
  • Spread the rice mixture evenly in the baking dish. Arrange the chicken breasts on top of the rice. Combine marmalade and oil in a small bowl, then brush the mixture over the chicken.
  • Cover a baking dish with foil and bake for 25 minutes. Uncover and bake for an additional 10 to 15 minutes, or until the chicken's juices run clear when the thickest part is cut (170°F).
